The Department of Animal Science houses the Penn State Meat Laboratory (a federally inspected slaughter and processing facility) and Poultry Processing facility at the Poultry Education and Research Center.

They are equipped for:

  • livestock and poultry slaughter
  • meat curing
  • smoking
  • fresh, fermented and cooked sausage manufacture

Classrooms and testing laboratories are available at these facilities, where undergraduate and graduate students conduct or observe meat and poultry product manufacture, evaluation, and chemical analysis.
